For the Clementine Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Premix (produces 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Instructions

For the Syrup: Put all the items inside a saucepan, heat until it reaches a light boil, mixing so the sugar melts. After that, remove from the stove allowing it to cool down completely. Pour to a sealable bottle, close it and refrigerate it chilled, it will last for around a month.

For the Premix: Combine every spirits and syrup into one sizeable container, leave to sit for one hour, then filter it preferably using a fine cloth, to ensure it's completely strained.

For serving: Measure 85ml of your premix to a mixing glass packed with ice, gently stirring gently for a minute until cold. Filter to a cold coupe glass or equivalent, top with a few cranberries adding the final touch using a light spray of mandarin oil above the glass.
